Keeping or selling my ensembles

I leveled my grove to 4 and now need to create two more workshops to 45. Can I sell the ensembles to free space? I am on step 78 of the quests and I see nothing that might still need them.

Since you are past quests 73 and 76 you don't need them for any quests. However, you will need 7500 bars for each of the AW techs. Ensembles can help you get them quicker, but PPs are even quicker. I don't remember if you get goods back when you sell them. If you do, it may be worthwhile to sell them as you need the goods.
