Why cant a manufactory have 6 different times like workshops?

They will once you are in chapter 18. There will be two for normal goods, two for sentient goods, and two for ascended goods. Once you make the first upgrades in chapter 12 for sentient production, you will lose the 1-day and 2-day normal productions and all productions will be 3 or 9-hour only.
