Why do you need multiple armories

While I'm sure once you finish the quest you could sell or remove the buildings if you prefer one; however, I would not. More armories allow for more units to be built in one slot in the barracks. This will in turn give you more troops! Whoo! Who doesn't like troops/elf troops?
One armory at it's max level will allow an additional 30 to the initial 12 you start out with, so you will only be allowed to build 42 units at once. When you have a few more armories just keep adding the numbers, it helps greatly when queing troops! There is also more information on this page.

In the later stages, when your squad size becomes much larger, you will need much, much more than 42 units at once to replenish your losses from battle. Most of these quests - such as the one you have included in the attachment - can be declined so you can move further in the questline without accomplishing it.
