where can i find how many orcs I have holding or waiting to be used in my armories

The little round gold and green Elvenar tree symbol, top of the screen, to the left of your coin bar

If you are on the PC platform, you can hover the cursor over an armory. It will tell you how many orcs are currently being produced by the armory and how long until they are finished.
